DEFINITION
Under general supervision, to assist in
the preparation and/or serving of a variety of food in quantity,
and to perform related work as required.
ESSENTIAL DUTIES AND
RESPONSIBILITIES include the following. Other duties may
be assigned.
- Assists and participates in the
operation of the speedline including preparation and
serving various food items.
- Assists in requisitioning,
receiving and storing of foods and supplies. Estimates
quantities of food and supplies required.
- Assists in taking of inventory and
completing Daily Worksheet.
- Assists in maintaining proper care
of equipment and sanitation of the kitchen.
- Washes dishes and kitchen
equipment.
- Serves in operation of assorted
equipment - grill and fryer.
- Assumes duties of Assistant III in
her absence.
QUALIFICATIONS GUIDE
Knowledge of:
- Methods and materials used in the
preparation of food.
- Standard safety practices and
procedures related to the preparation and transporting of
food.
- Standard kitchen equipment,
utensils and measurements.
- Hold and maintain current Food Handlers
Certification (California Uniform Retail Food Facilities Law, 1999).
Ability to:
- Estimate quantities needed and to
order correct amounts for economical food service.
- Communicate with customers.
- Count, add, subtract and make
change quickly and accurately.
- Work efficiently during rush
conditions.
- Oversee the operation of the
department during the absence of Assistant III.
- Understand and carry out oral and
written instructions.
- Maintain cooperative relationships
with those contacted in the course of work.
Training and Experience:
One year of experience in the
preparation and serving of food, dealing with the public, or any
combination of training and experience that could likely provide
the desired knowledge and abilities. Demonstrate dependability
and cleanliness.

vision, peripheral vision, depth perception, and the ability to
adjust focus.
